Om Noms – Strawberry Layer Cake


As I mentioned in my previous post, here’s the recipe for the cake that I made for Valentine’s Day.  It’s *loosely* based off of a recipe I found on Weight Watchers (feel free to use the actual WW recipe if you want, from experience I can say it will still taste great)… either way it’s a pretty “healthy” dessert compared to most out there!  Very tasty, too!  It’s more of a “summer dessert” since it’s frozen, it’d be more refreshing in the hot summer season, but it being winter time doesn’t change the taste. 🙂 Frozen Strawberry Layer Cake… kind of a long name, though, eh? Strawberry Shortcake? Frozen Strawberry Shortcake? Whichever fits your fancy!

Frozen Strawberry Layer Cake

What You Need!:

1 angel food cake (click here if you don’t know what it is)
1-2 cans of strawberry pie filling/topping (I used 2)
Fat-free/sugar free ice cream *or* fat-free frozen yogurt (I used vanilla/choco swirl flavor)
Sugar free chocolate syrup

No baking required for this!

  1. Slice the angel food cake in half, horizontally, so you have a top and a bottom piece. Set the top aside.
  2. Use 1 can of strawberry topping (or half a can if using 1 can total), and spoon out the strawberry topping over the bottom piece. Make sure to drizzle some of the strawberry sauce over the sides for looks 🙂
  3. Now is a good time to put one or two scoops of icecream/yogurt into the center of the cake.
  4. Place the top of the cake on top of the bottom piece. Repeat step 2 (using the remaining half of the can, or your 2nd whole can) for the top, remembering to drizzle sauce over the sides.
  5. Place another scoop of your ice cream or yogurt into the center, feel free to dress the cake with ice cream around it like I did in the picture.
  6. Drizzle the sugar free chocolate syrup as desired over the cake!
  7. Freeze for a minimum of 6 hours to a maximum of 3 days before serving!

Yields 12 servings. For Weight Watchers users, one serving is roughly 3-4 points.

  1. Oooh, that sounds super yummy! Though actually, part of me isn’t a huge fan of canned strawberry stuff, though I love the natural/normal kind. But it still sounds like it’s worth trying out! 😀
